Menu Monday
I almost missed posting our menu for this week.
- Monday – Pancakes
- Tuesday – Tacos
- Wednesday - Chicken Noodle Casserole
- Thursday – Pizza
- Friday – ???
- Saturday – It’s Hammie’s birthday. It will be interesting to see what he picks
- Sunday – Roast and Potatoes & Carrots
When I decided we were going to have pancakes tonight I realized we were out of syrup. What the what?!?
I found this quick recipe for syrup
- 2 cups Sugar
- 8oz Evaporated Milk
- 1 TBsp Butter
- Boil Sugar and mil, stirring constantly until all sugar is dissolved. Cook over high heat until the mixture starts to boil. Remove from heat and add butter. Let sit 5 minutes. Stir.
It was so yummy, but VERY sweet. I think it would be better as a sauce over a cake or cheesecake.

Menu Monday
It’s time to get back to menu planning. It shameful to think about some of the meals that we have eaten in the last couple of weeks. There may or may not have been meals that consisted of mainly cheeseballs.
I look forward to being a little more organized and eating actual meals.
- Monday – Meatless Monday Baked Pasta
- Tuesday – Tostadas
- Wednesday – Breakfast for dinner. It will include eggs and bacon and who knows what else.
- Thursday – Sweet & Sour Meatballs
- Friday – take out
- Saturday – ???
- Sunday – Roast & Potatoes and Carrots
I think everyone has a baked pasta recipe. The one I have is labeled “Baked Ziti” but we rarely have gluten-free ziti in the house. I don’t think it matters what shape the pasta is in. Throw it together and bake it.
I haven’t mentioned it in awhile but I don’t usually plan anything on Saturdays. I never know what Saturday will bring so it’s just easier for me not to plan and who knows what will happen. The kidlets are so happy when I end up saying we are having pancakes for dinner.
And blessed Sunday…I don’t know what I would do without a crock-pot. We just changed to the 2pm meeting time. That means we get home from church after 5pm and everyone is starving. I just need something that I can throw on the table as quickly as possible.

It’s Baaaack….Menu Monday
Look at me planning my menu for the week!
So without out further ado…
- Monday – Chicken Pot Pie
- Tuesday – Tacos or maybe Tostadas (they are pretty interchangeable at our house)
- Wednesday – Baked Potatoes
- Thursday – Sweet and Sour Meatballs
- Friday – Pizza
- Saturday – hmmm, good question
- Sunday – Roast
If I include something in our menu that the recipe is listed on A Pinch of Chaos I will just link to the regular recipe, not a gluten-free version. If I come up with any new recipes they will be gluten-free, but still yummy.
The Chicken Pot Pie recipe that I use is from my Betty Crocker cookbook. There are a million different versions. The only difference is I will be using frozen gluten-free crusts. I have failed miserably at making a good homemade gluten-free crust so why bother when Whole Foods sells good frozen ones?
Yes we still have pizza. We do one of two things when we have take-out pizza: 1. we get Einstein a gluten-free pizza from one of the pizza places that has gluten-free crusts, or 2. He has a frozen gluten-free pizza. Usually he has frozen.

Today is my Grandma’s birthday. She would be turning 98. We always have KFC on her birthday as a tribute to her. Unfortunately I don’t have any See’s chocolate in my house…for shame!

I am having Easter dinner at my house this year, but I am really not in the mood for traditional Easter food. I think this is the perfect year to try something different. Especially since instead of going to Church on Sunday it is General Conference.

Menu Monday
I know. I know. I am a day late.
Here is our pitiful little plan for this week:
- Monday – Taco Bell…I just didn’t feel like cooking.
- Tuesday – Chicken Pot Pie
- Wednesday – It will probably be take-out again.
- Thursday – Orange Chicken
- Friday – It’s Big Daddy’s Birthday!!! I am waiting for him to decide what he wants to do.
- Saturday – Tacos
- Sunday – Carne Asada
I am trying really hard to avoid relying on take-out on scouts Wednesday, but this week scouts is earlier and the time between when Big Daddy gets home and I need to leave with the boys is really close.
What do you do when you need something quick with very little clean up time?
A couple of weeks ago I tried a new recipe for Spicy Orange-glazed Drumsticks…not a big hit at my house. I think it would have been better to marinate the chicken before cooking, but my kids didn’t like it at all. They kept saying that they wanted it to taste like Panda Express Orange Chicken. Then on Saturday we found this at Costco:
I am going to try this trick for my chicken and see if the kidlets like it better.

Menu Monday
I can’t believe I completely forgot to post this earlier. Duh…
Our week this week is a little funky and there isn’t much planning on my part.
- Monday – Scrambled eggs. Big Daddy and the Boyz are off having a Boyz Night Out so that means I don’t have to cook real food. I actually thought about just having popcorn but Roo said she was STARVING so I went one step beyond popcorn.
- Tuesday – Chicken Tortilla Soup
- Wednesday – Cub Scout Blue and Gold Banquet. We will be dining on Spaghetti.
- Thursday - Pizza
- Friday – Dinner at my Dad’s. I don’t know what we will be having for dinner, but I guarantee there will be s’mores for dessert.
- Saturday – Who knows
- Sunday – Roast and potatoes or Yorkshire Pudding
I really need to break out of my rut…again.

Menu Monday
Here is what we plan to eat this week…maybe.
- Monday – okay so I am not sure what to call this meal. I take this recipe and instead of stretching by hand to make fry bread I roll the recipe out and cut into 2X2 inch squares and then fry. After they are done cooking and cooled I slice them in half and add seasoned ground beef with a little BBQ sauce and cheese and whatever else you want to add, like lettuce and tomatoes. It’s not the least bit healthy, but it is very yummy and again it is something everyone will eat without complaint.
- Tuesday – Heading over to Miss T’s 4th birthday so I don’t have to cook.
- Wednesday – Homemade Chicken Pot Pie. I use a recipe from my old Betty Crocker Cookbook.
- Thursday - Ham’s Birthday! I think we might have pizza.
- Friday – Pay Day Take-out
- Saturday – Your guess is as good as mine.
- Sunday – Roast and Yorkshire Pudding. I tried making the Yorkshire pudding in muffin tins and we like it much better done in a 9X13 pan.
How is that for an easy and so non-healthy week of food!

Menu Monday Help
I am sick.
I have been sick since Halloween. For some reason I get embarrassed when I am sick. Like it means I am weak. Or, shudder, that my house is germy. Or I am a failure as a woman and Mom and allow myself to get sick. Yeah I know…I am crazy. Crazy and sick. I have had maybe 4 days where I haven’t been running a fever. I don’t think it is a coincidence that it was last weekend that I felt better.
So what does that have to do with Menu Monday?
Well I want to know what’s your favorite “Get Better” recipe. The recipe you pull out when you are feeling a little under the weather. The recipe you fix when your husband or kiddos are sick. Or better yet, the recipe that your Mom made when you were sick as a kid. The MIRACLE recipe!
Who knows, this may turn into a little give-away. I can’t guarantee anything, because right now I don’t have the strength to put together a gift. BUT if I ever do get better there may be a prize.

- Wednesday – ??? Cub Scout night is hard for me to plan. Something quick and easy!

- Friday – School Picnic Night
- Saturday – Date Night (Grandma and Grandpa will be feeding the kiddos)
- Sunday – Roast and Yorkshire Pudding
I feel like I am getting back into a rut of the same things every week. I am going to search some online sites for recipes for next week.

- Wednesday – Something easy. I have just started working with the Cub Scouts…again. It makes our Wednesday evenings a little tight on time, but I want to stay away from relying on fast food.

- Friday – Payday Take Out.
- Saturday – ???
- Sunday – Roast and Yorkshire Pudding.
We have had roast for the last few Sundays and I think I am going to stick with FOREVER. I can get 3 small roasts at Costco for $15. They are the perfect size for us to have for dinner and some times we have enough leftover for dinner on Monday. It’s the best Sunday dinner. I throw 1 in the crockpot on Sunday morning and we eat last Sunday afternoon.
It funny that my menu plan for a week has 3 days that nothing has been planned…um yeah, so?!?
