Last night I made the Zippy Ziti from this week's menu and it was very yummy. In fact Big Daddy said it was definitely a rotation recipe...you know one of the ol' standbys that you make when you don't know what else to make and most of the ingredients are things I have usually have in my pantry.
There were a few changes I will be making the next time I make it.
Zippy Ziti
8 oz pkg of ziti, uncooked
2 C. frozen broccoli cuts - I will be adding at least twice as much.
1 clove garlic, minced - I will be doubling this also
1 C. alfredo sauce - I added 2 cups and it was just about right
14 1/2 oz can Italian-style diced tomatoes
2 C. mozzarella cheese
2 Tbsp. Italian style bread crumbs - Everyone said it needed more breadcrumbs on the top.
2 tsp. butter, melted
Prepare ziti according to package directions; add broccoli during last minute of cooking time. Drain; add garlic, alfredo sauce, tomatoes and cheese, mixing well. Spoon into a casserole dish; set aside. Toss bread crumbs with butter; sprinkle over ziti. Bake at 350 degrees about 20-30 minutes, until top is golden. Makes 4-6 servings.
So did anyone else try it? Any changes you will be making to the recipe?
Now I am going to grab a book and take it easy for the rest of the day. I've felt like I might be catching a bug for the last couple of days. I have been having chills and felt a little dizzy (well more that usual) and today I feel like I have been ran over by a truck. I don't have anywhere I need to be and no therapist for Ham so it is a good day to rest and get better.

That sounds good. Kids will always eat pasta. I did a Parmesan Crusted Chicken and Pasta thing tonight which sounds way fancier than it was. In fact, I'm still sitting here typing in my apron. I feel so domestic!

ReplyDeleteHope you feel better soon. The only good thing about getting sick is it's a good excuse to lay on the couch and read. Well, until somebody needs something...we are the mom after all.

ReplyDeleteI bought the ingredients and had all intentions of making it for supper tonight. But....that didn't happen, so I will make for lunch tomorrow. Having a salad and garlic bread with it as well. I can't wait to try it....

I made your Zippy zita...served it with a salad and garlic bread....we are having a 4 birthday party and I will serve this as the main course...and then we will have appetizers as well....
